About five months have passed since the preparation of sake started in the brewery. Today, Koshikidaoshi (甑倒し) is done.
Koshikidaoshi is an annual event in the sake brewing industry.
The “Koshiki” is a huge steamer for steaming sake rice, “daoshi” means laydown.
It is named so because the steamer koshiki needs to laydown on its side after the work of steaming the sake rice to be used for this season’s brewing is finished for cleaning.
